Yesterday afternoon I met up with an amazing group of Toronto-area bloggers at Trinity-Bellwoods Park in downtown Toronto. We staked out a great location in the park, and as everyone arrived an amazing buffet was laid out.
My contribution was caprese salad on a stick and black bean brownies. I’m happy to say that everyone loved both items, and I’ll be adding them to my book of trusted recipes!
I took a little bit of everything, including pasta salad, fruit salad, Susan’s tofu balls and lots and lots of other delicious things.
It was so nice to chat with Susan, Nienke, Raquel, Ryan, Brad, Morgan, Miranda, Christina, Jen, Kristen, and Kristen’s mom. We chatted about the Healthy Living Summit, the Indy race, and the man who set up a tightrope a few feet away from us.
It was a wonderful afternoon in the city!
Caprese Salad on a Stick
1 pint of cherry or grape tomatoes
1 container of mini bocconcini
1 package of wooden skewers
basil
olive oil
salt and pepper
- soak a handful of skewers in water for about an hour
- thread the bocconcini, tomatoes, and basil leaves onto the skewers
- drizzle the olive oil over the skewers and add the salt and pepper
For the black bean brownies, I used the recipe from Stylish Cuisine with a few modifications:
- I used 19 oz of beans instead of 15.5 oz
- I omitted the instant coffee
- I used my perfect brownie pan (review coming soon!) and sprinkled the chips across the squares
These yummy brownies are fudgy but light. However, they do contain all of the protein and fibre that eating beans provides, and they can cause some of the unpleasant… side effects that many people experience after they eat beans. Just a warning!
